Featured Recipe Cebiche(marinated fish in lime juice and garlic)Typical Peruvian dish 1 lb. Red Snapper, Cod, Tilapia, Cat Fish or Pollock fillets 6 fresh limes, juiced 1 Tb. cilantro, chopped 1 tsp. salt 3-4 garlic cloves, pressed 3 Tbs. celery, chopped ¼ tsp. Peruvian Seasoning 1-2 Tbs. Serrano pepper or other hot pepper, chopped (remove seeds for mild taste) 1 medium red onion, sliced (soak in cold water and little salt and drain) Cut fish in ½ inch squares. Add lime juice, garlic, celery, cilantro, salt, seasoning, and peppers. Marinate for 30 minutes or more (Americans like fish that have been marinated for 1 hour or until fish change color from pink to white). Keep fish refrigerated until is ready to eat. Serve over a bed of lettuce, garnish with onion. Peruvians like to put slices of cooked potatoes, slices of cooked jams or a piece of corn next to Cebiche. It is a cold dish that can be enjoy all year round.
